Ingredients

  • 4 pieces bone-in pork chops
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 pieces ripe peaches, peeled and sliced
  • 3 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 0.25 cup water

Directions

Step 1

Season both sides of the pork chops with salt and pepper.

Step 2

Heat olive oil in a large skillet over medium-high heat. Once hot, add the pork chops and sear for 3-4 minutes per side, until browned. Remove the pork chops and set aside.

Step 3

In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for 30 seconds until fragrant.

Step 4

Add the sliced peaches to the skillet and cook for 2-3 minutes, stirring gently, until they begin to soften.

Step 5

Stir in the honey, apple cider vinegar, soy sauce, thyme, and water. Cook for 2-3 minutes until the sauce begins to thicken slightly.

Step 6

Return the pork chops to the skillet, nestling them into the peach mixture. Reduce the heat to low, cover the skillet, and simmer for 10-12 minutes, or until the pork chops are cooked through and reach an internal temperature of 145°F (63°C).

Step 7

Remove the skillet from the heat and let the dish rest for 5 minutes. Spoon the peach sauce over the pork chops before serving.

Step 8

Serve warm with your choice of side dishes, such as mashed potatoes, rice, or a fresh green salad.
