Ingredients

  • 4 pieces Bone-in pork chops
  • 1 cup Peach preserves
  • 0.25 cup Soy sauce
  • 2 tablespoons Brown sugar
  • 1 tablespoon Yellow mustard
  • 2 cloves Garlic cloves, minced
  • 0.5 teaspoon Ground ginger
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 1 cup Canned peach slices (in juice), drained

Directions

Step 1

Season the pork chops on both sides with salt and pepper.

Step 2

Heat the olive oil in a skillet over medium-high heat. Sear the pork chops for 2-3 minutes on each side, or until lightly browned. This step is optional but adds extra flavor.

Step 3

In a medium-sized mixing bowl, whisk together the peach preserves, soy sauce, brown sugar, yellow mustard, minced garlic, and ground ginger until fully combined.

Step 4

Arrange the seared pork chops in the bottom of a crock pot in a single layer.

Step 5

Pour the peach preserve mixture over the pork chops, ensuring they are evenly coated.

Step 6

Scatter the drained peach slices over the top of the pork chops.

Step 7

Cover the crock pot with the lid and cook on low heat for 6-7 hours or on high heat for 3-4 hours, until the pork chops are tender and fully cooked (internal temperature should reach 145°F).

Step 8

Once cooked, carefully remove the pork chops and peaches from the crock pot. If desired, you can thicken the sauce left in the crock pot by transferring it to a saucepan, bringing it to a boil, and whisking in a slurry of cornstarch and water (1 tablespoon cornstarch mixed with 2 tablespoons water). Let it cook until thickened and serve the sauce alongside the pork chops.

Step 9

Serve the pork chops hot with the peach sauce on top or on the side. They pair well with mashed potatoes, rice, or roasted vegetables.
