Ingredients

  • 3 whole Ripe peaches
  • 2 whole Chipotle peppers in adobo sauce
  • 2 tablespoons Honey
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Brown sugar
  • 2 cloves Garlic
  • 1 tablespoon Olive oil
  • 0.25 cup Water
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Wash and peel the peaches, then cut them into small chunks. Discard the pits.

Step 2

Mince the garlic cloves finely.

Step 3

In a medium saucepan, heat the olive oil over medium heat.

Step 4

Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Step 5

Add the chopped peaches to the saucepan and cook for about 5 minutes, stirring occasionally, until the peaches start to soften and release their juices.

Step 6

Stir in the chipotle peppers, honey, apple cider vinegar, brown sugar, salt, and black pepper.

Step 7

Pour in the water and stir to combine. Reduce the heat to low and let the mixture simmer for about 8-10 minutes, until the peaches are very soft and the flavors meld together.

Step 8

Remove the saucepan from heat and allow the mixture to cool slightly.

Step 9

Transfer the mixture to a blender or use an immersion blender to blend until smooth. Adjust the consistency with additional water if desired.

Step 10

Taste and adjust seasoning if necessary. Add more honey for sweetness or more chipotle peppers for heat.

Step 11

Once blended, transfer the sauce to a clean jar or container. Allow it to cool completely before storing in the refrigerator for up to one week.
