Ingredients

  • 4 Ripe peaches
  • 375 ml Sauternes wine
  • 50 g Granulated sugar
  • 1 Vanilla bean
  • 1 strip Lemon zest
  • 1 strip Orange zest
  • 250 ml Water
  • 4 Mint leaves (optional, for garnish)

Directions

Step 1

Begin by bringing a large pot of water to a boil. Prepare an ice bath by filling a large bowl with cold water and ice cubes.

Step 2

Score a shallow 'X' at the bottom of each peach with a sharp knife. Carefully place the peaches into the boiling water and blanch them for 60 seconds.

Step 3

Using a slotted spoon, transfer the peaches from the boiling water to the ice bath to cool. Once cool, gently peel off the skins starting from where you made the 'X'. Set the peeled peaches aside.

Step 4

In a medium saucepan, combine the Sauternes wine, granulated sugar, water, vanilla bean (split lengthwise and seeds scraped into the liquid), lemon zest, and orange zest. Stir and bring the mixture to a simmer over medium heat.

Step 5

Once the liquid is simmering, carefully add the peeled peaches to the saucepan. Ensure they are mostly submerged in the liquid.

Step 6

Simmer the peaches gently for about 10-12 minutes, turning them occasionally to ensure even poaching. The peaches should be tender but still hold their shape.

Step 7

Using a slotted spoon, remove the peaches from the poaching liquid and place them on a plate or in a serving dish to cool slightly.

Step 8

Continue simmering the poaching liquid for an additional 5 minutes, or until it reduces slightly to create a syrupy consistency.

Step 9

Discard the vanilla bean pod, lemon zest, and orange zest from the liquid. Allow the syrup to cool slightly.

Step 10

Serve each peach in a bowl or plate, drizzling the Sauternes syrup over the top. Garnish with a sprig of mint, if desired.
