Ingredients

  • 2 cups ripe peaches, diced
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup unsalted butter, softened
  • 2 eggs
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.75 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 2 tablespoons powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan with butter or nonstick cooking spray. Line the bottom with parchment paper for easy removal.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, cream together the softened butter and granulated sugar using a hand mixer or stand mixer until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs one at a time to the creamed butter mixture, beating well after each addition. Stir in the vanilla extract and lemon zest.

Step 5

Gradually alternate adding the dry ingredients and buttermilk to the wet mixture, starting and ending with the dry ingredients. Mix until just combined.

Step 6

Gently fold the diced peaches into the batter, being careful not to overmix.

Step 7

Pour the batter into the prepared cake pan and use a spatula to smooth the surface evenly.

Step 8

Bake in the preheated oven for 35-40 minutes or until a toothpick inserted in the center comes out clean.

Step 9

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, carefully invert the cake onto a wire rack to cool completely.

Step 10

Before serving, dust the top of the cake with powdered sugar for a finishing touch. Slice and enjoy!
