Ingredients

  • 6 cups Peaches (fresh, peeled and sliced)
  • 1 cup Granulated sugar
  • 3 tablespoons Cornstarch
  • 2 tablespoons Lemon juice
  • 1 teaspoon Ground cinnamon
  • 0.5 cup Unsalted butter
  • 0.5 cup Brown sugar
  • 1 cup All-purpose flour
  • 0.5 cup Rolled oats
  • 0.25 teaspoon Salt
  • 1 9-inch Premade pie crust

Directions

Step 1

Preheat your oven to 375°F (190°C). Place the pie crust into a 9-inch pie dish, pressing it firmly into the bottom and sides. Crimp or trim the edges as desired.

Step 2

In a large bowl, combine the sliced peaches, granulated sugar, cornstarch, lemon juice, and cinnamon. Mix gently but thoroughly until the peaches are well-coated in the mixture.

Step 3

Pour the peach filling evenly into the prepared pie crust.

Step 4

In another bowl, prepare the streusel topping. Combine the unsalted butter, brown sugar, all-purpose flour, rolled oats, and salt. Use a pastry cutter or your fingers to mix everything together until it forms a crumbly texture.

Step 5

Sprinkle the streusel topping evenly over the peach filling, covering it completely.

Step 6

Place the pie onto a baking sheet to catch any juices that might bubble over. Bake in the preheated oven for 50 minutes, or until the filling is bubbling and the streusel topping is golden brown.

Step 7

Remove the pie from the oven and let it cool on a wire rack for at least 2 hours to allow the filling to set.

Step 8

Slice and serve the pie on its own or with a scoop of vanilla ice cream, if desired.
