Ingredients

  • 6 whole ripe peaches
  • 1 cup orange juice
  • 1 cup plain Greek yogurt
  • 3 tablespoons honey
  • 1 teaspoon fresh ginger
  • 1 tablespoon lemon juice
  • 0.25 teaspoons ground cinnamon
  • 0.5 cup cold water
  • 4 sprigs fresh mint leaves (for garnish)

Directions

Step 1

Peel the peaches by blanching: Bring a pot of water to a boil, and prepare an ice bath in a large bowl. Score a small 'X' at the bottom of each peach with a knife. Drop peaches into boiling water for 30 seconds, then immediately transfer them to the ice bath. Peel off the skins.

Step 2

Cut each peach in half, remove the pits, and roughly chop the flesh into chunks.
