Ingredients

  • 4 large fresh peaches
  • 2 tablespoons unsalted butter
  • 1 medium shallot
  • 2 cloves garlic
  • 2 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • 0.25 teaspoons ground cinnamon
  • 0.25 teaspoons ground ginger
  • 0.5 cups chicken stock
  • 0.5 teaspoons kosher salt
  • 0.25 teaspoons ground black pepper

Directions

Step 1

Peel the peaches, remove the pits, and dice them into small chunks.

Step 2

Finely mince the shallot and garlic.

Step 3

In a medium saucepan, melt the butter over medium heat.

Step 4

Add the minced shallot and garlic to the saucepan. Cook for 2-3 minutes, stirring frequently, until fragrant and softened.

Step 5

Add the diced peaches, honey, apple cider vinegar, ground cinnamon, and ground ginger to the saucepan. Stir well to combine all the ingredients.

Step 6

Pour in the chicken stock, and season with kosher salt and ground black pepper. Stir again.

Step 7

Bring the mixture to a simmer and reduce the heat to medium-low. Cook for 8-10 minutes, stirring occasionally, until the peaches soften and the sauce thickens slightly.

Step 8

Remove the saucepan from the heat and let it cool for a couple of minutes.

Step 9

Using an immersion blender or regular blender, puree the sauce until smooth. If you prefer a chunkier sauce, you can skip this step or blend partially.

Step 10

Taste the sauce and adjust seasoning if necessary. Add more honey for sweetness or a splash of vinegar for extra tanginess as desired.

Step 11

Serve the peach sauce warm over roasted or grilled poultry, and enjoy!
