Ingredients

  • 3 medium-sized, ripe peaches
  • 3 medium-sized, ripe plums
  • 2 medium-sized, ripe pears
  • 0.5 cups granulated sugar
  • 0.25 cups brown sugar
  • 0.25 cups all-purpose flour
  • 1 teaspoons ground cinnamon
  • 0.5 teaspoons ground nutmeg
  • 0.25 teaspoons salt
  • 4 tablespoons unsalted butter
  • 1 tablespoons lemon juice
  • 1 teaspoons vanilla extract
  • 1 package (two 9-inch crusts) store-bought pie crust
  • 1 large egg
  • 1 tablespoon water

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Rinse and peel the peaches, plums, and pears. Slice all the fruits into even wedges, discarding any cores, pits, or tough parts.

Step 3

In a large mixing bowl, combine the sliced peaches, plums, and pears. Add the granulated sugar, brown sugar, flour, ground cinnamon, ground nutmeg, salt, lemon juice, and vanilla extract. Toss gently until the fruits are evenly coated.

Step 4

Unroll one of the pie crusts and press it into the bottom and sides of a greased 9x13-inch casserole dish. Trim any overhanging edges.

Step 5

Pour the fruit mixture into the crust-lined casserole dish, spreading it out in an even layer. Top the fruit with small pieces of the butter, distributing them evenly on the surface.

Step 6

Unroll the second pie crust and cut it into strips to create a lattice pattern. Lay half of the strips evenly across the top of the fruit. Lay the remaining strips diagonally across the first set to create a crisscross lattice. Trim and crimp the edges neatly.

Step 7

In a small bowl, whisk the egg with the water to create an egg wash. Lightly brush the egg wash over the lattice top and edges of the crust to encourage a golden-brown finish.

Step 8

Place the casserole dish on a baking sheet to catch any potential drips. Transfer to the preheated oven and bake for 50-55 minutes, or until the crust is golden brown and the fruit filling is bubbling.

Step 9

Remove the casserole pie from the oven and let it cool for at least 20 minutes to allow the filling to set.

Step 10

Slice and serve warm with a dollop of whipped cream or a scoop of vanilla ice cream, if desired.
