  • 2 cups granulated sugar
  • 2 tablespoons lemon juice
  • 3 tablespoons Amaretto liqueur
  • 1 cup pecans
  • 1 packet fruit pectin

Directions

Step 1

Prepare the peaches: Bring a pot of water to a boil. Make a small 'X' at the bottom of each peach with a knife. Blanch peaches in boiling water for 30 seconds, then transfer to an ice bath. Peel the skins, then pit and chop peaches into small pieces.

Step 2

In a heavy-bottomed pot or large saucepan, combine the chopped peaches, granulated sugar, and lemon juice. Stir well to coat the peaches in the sugar and let the mixture sit for 10 minutes to macerate.

Step 3

Place the pot over medium heat and bring the mixture to a gentle boil. Allow it to cook for 10-15 minutes, stirring frequently, until the peaches begin to soften and break down.

Add the fruit pectin to the pot and stir until fully dissolved. Bring the mixture to a full rolling boil (one that doesn’t stop bubbling even when stirred) and cook for 1-2 minutes. Stir constantly to prevent sticking.

Process the jars in a boiling water bath for 10 minutes for proper sealing. Ensure the jars are fully submerged in water during this step.

Step 8

Remove the jars from the water bath and allow them to cool on a clean towel or cooling rack. Check the seals after the jars have cooled by pressing the center of the lid—if it doesn’t pop back, the jar is sealed properly.

Step 9

Store sealed jars in a cool, dark place for up to 1 year. Refrigerate after opening and use within a month.
