Ingredients

  • 4 large Eggs
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt
  • 2 tablespoons Unsalted butter
  • 2 medium Fresh peaches
  • 2 tablespoons Brown sugar
  • 0.5 teaspoon Ground cinnamon
  • 1 tablespoon Powdered sugar

Directions

Step 1

Separate the egg whites and yolks into two clean, dry bowls.

Step 2

In the bowl with the yolks, add the granulated sugar, vanilla extract, and a pinch of salt. Whisk until the mixture is pale and creamy.

Step 3

Using a hand or stand mixer, beat the egg whites on medium speed until soft peaks form. This should take about 3–4 minutes.

Step 4

Gently fold the whipped egg whites into the yolk mixture using a spatula. Be careful not to deflate the mixture.

Step 5

Heat 1 tablespoon of unsalted butter in a nonstick skillet over medium heat. Once melted, pour half of the egg mixture into the skillet, spreading it evenly. Cover with a lid and cook for 3–4 minutes until the underside is golden and the top is set.
