Ingredients

  • 2 Ripe peaches
  • 500 ml Water
  • 100 g Granulated sugar
  • 1 tsp Vanilla extract
  • 150 g Fresh raspberries
  • 1 tsp Lemon juice
  • 4 scoops Vanilla ice cream
  • 4 Fresh mint leaves (optional, for garnish)

Directions

Step 1

Bring a medium saucepan of water to a boil. Carefully add the peaches and blanch them for 1-2 minutes, or until the skins begin to loosen.

Step 2

Transfer the peaches to a bowl of ice water to cool. Peel off the skins, then slice the peaches in half and remove the pits.

Step 3

In the same saucepan, combine 500 ml of water, granulated sugar, and vanilla extract. Bring the mixture to a gentle simmer over medium heat, stirring until the sugar dissolves.

Step 4

Add the peeled peach halves to the liquid. Simmer for 5-7 minutes, or until the peaches are tender but still hold their shape. Remove the peaches from the liquid and let them cool to room temperature.

In a blender or food processor, purée the fresh raspberries with the lemon juice until smooth. Strain the purée through a fine mesh sieve to remove the seeds, if desired.

To assemble, place two peach halves in a serving dish or dessert bowl. Add two scoops of vanilla ice cream on top or beside the peaches.
