Ingredients

  • 4 large (about 2 lbs) ripe peaches
  • 2 tablespoons (finely grated) fresh ginger
  • 1 medium (finely chopped) yellow onion
  • 3 large (minced) garlic cloves
  • 0.5 cup apple cider vinegar
  • 0.75 cup (packed) brown sugar
  • 0.25 cup golden raisins
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground cloves
  • 0.5 teaspoon ground cumin
  • 0.25 teaspoon (optional, for heat) red pepper flakes
  • 1 teaspoon salt
  • 0.25 cup water

Directions

Step 1

Peel, pit, and dice the peaches into small cubes. Set them aside.

Step 2

In a large, heavy-bottomed saucepan, heat a drizzle of neutral oil over medium heat and add the chopped onion. Cook, stirring frequently, for about 5 minutes until the onion softens and becomes translucent.

Add the grated ginger and minced garlic to the saucepan. Cook for another 1-2 minutes, stirring, until fragrant.
