Ingredients

  • 3 cups (peeled, pitted, and diced) Peaches
  • 0.5 cups Granulated sugar
  • 0.25 cups Brown sugar
  • 2 tablespoons Cornstarch
  • 0.5 teaspoons Ground cinnamon
  • 1 tablespoons Lemon juice
  • 2 (standard-size rolled doughs, thawed if frozen) Premade pie crusts
  • 2 tablespoons (for dusting) All-purpose flour
  • 1 (for egg wash) Egg
  • 1 tablespoons (for egg wash) Water
  • 3 cups (for frying, optional) Vegetable oil

Directions

Step 1

In a medium saucepan over medium heat, combine the diced peaches, granulated sugar, brown sugar, cornstarch, cinnamon, and lemon juice.

Step 2

Cook the mixture while stirring frequently, until it thickens and the peaches soften, about 7–10 minutes. Remove the filling from heat and let it cool completely.

Step 3

Lightly flour a clean surface and roll out the pie crusts. Use a round cutter (about 4–5 inches in diameter) to cut out circles from the dough. You should get about 8 circles total.

Step 4

Place a spoonful of the cooled peach filling in the center of each dough circle, ensuring you don’t overfill so the edges can be sealed.

Step 5

Fold each circle over the filling to create a half-moon shape. Press the edges together with a fork to seal tightly.

Step 6

In a small bowl, whisk together the egg and water to prepare the egg wash. Brush this mixture over the top of each pie to achieve a golden finish during baking, or skip if frying.

Step 7

For baking: Preheat your oven to 375°F (190°C). Place the prepared pies on a parchment-lined baking sheet and bake for 18–20 minutes, or until golden brown and crisp.

Step 8

For frying: Heat 3 cups of vegetable oil in a deep pan or pot to 350°F (175°C). Fry the pies in batches, 2–3 minutes per side, until golden and crispy. Remove with a slotted spoon and let drain on a paper towel-lined plate.

Step 9

Allow the pies to cool slightly before serving. Enjoy them warm, optionally paired with vanilla ice cream or a dusting of powdered sugar.
