Ingredients

  • 6 cups Frozen peaches
  • 0.75 cup Granulated sugar
  • 0.25 cup Brown sugar
  • 2 tablespoons Cornstarch
  • 1 tablespoon Lemon juice
  • 1 teaspoon Ground cinnamon
  • 0.5 cup Unsalted butter
  • 1 cup All-purpose flour
  • 2 teaspoons Baking powder
  • 0.25 teaspoon Salt
  • 1 cup Whole milk
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or cooking spray.

Step 2

In a large saucepan over medium heat, combine the frozen peaches, granulated sugar, brown sugar, cornstarch, lemon juice, and cinnamon.

Step 3

Cook the peach mixture for 5-7 minutes, stirring frequently, until the peaches soften slightly and the mixture thickens. Remove from heat and set aside.

Step 4

In a medium microwave-safe bowl, melt the butter completely in the microwave (about 30 seconds). Pour the melted butter into the prepared baking dish, spreading it evenly.

Step 5

In another mixing bowl, whisk together the flour, baking powder, and salt. Gradually stir in the milk and vanilla extract until a smooth batter forms.

Step 6

Pour the batter over the melted butter in the baking dish, but do not stir. Gently spoon the peach mixture over the batter, distributing it evenly. Again, avoid stirring; the batter will rise through the peaches during baking.

Step 7

Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and the edges are bubbling.

Step 8

Remove the cobbler from the oven and let it cool for 10-15 minutes. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
