Ingredients

  • 2 pieces Chicken breast
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

  • 2 pieces Peaches
  • 6 cups Mixed spring greens
  • 0.5 cup Feta cheese
  • 0.5 cup Pecans
  • 2 tablespoons Balsamic vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Dijon mustard

Directions

Step 1

Season the chicken breasts with salt and black pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the chicken breasts for 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C). Remove from the skillet and set aside to rest for 5 minutes before slicing into thin strips.

While the chicken is cooking, prepare the peaches. Wash them thoroughly, slice them in half, and remove the pits. Slice each half into thin wedges.
