Ingredients

  • 6 cups (peeled, pitted, and diced) Ripe peaches
  • 3 cups Granulated sugar
  • 2 tablespoons Lemon juice
  • 1 teaspoon Ground cardamom
  • 1 cup Water

Directions

Step 1

Start by washing the peaches thoroughly. Bring a large pot of water to a boil and prepare an ice bath in a separate large bowl.

Step 2

Score an 'X' at the bottom of each peach with a sharp knife. Blanch the peaches in boiling water for about 30 seconds, then immediately transfer them to the ice bath. Once cooled, peel the skins off the peaches, then pit and dice them into small pieces.

Step 3

In a large pot, combine the diced peaches, granulated sugar, lemon juice, ground cardamom, and water. Stir well to ensure the sugar dissolves evenly.

Step 4

Place the pot over medium heat and bring the mixture to a gentle boil. Stir frequently to prevent the jam from sticking to the bottom of the pot.

Step 5

Reduce the heat to low and simmer for 30-40 minutes, continuing to stir occasionally. Use a potato masher or the back of a spoon to break down larger peach chunks for a smoother jam, or leave them intact for a chunky texture.

Step 6

Once the mixture thickens and reaches the desired jam consistency (typically when it coats the back of a spoon), remove it from heat. To test for doneness, place a small dollop onto a chilled plate and run your finger through it. If it holds its shape and doesn't run back together, it’s ready.

Step 7

Carefully ladle the hot jam into sterilized jars, leaving about 1/4-inch headspace. Wipe the rims with a clean cloth, seal the jars with lids, and process them in a boiling water bath for 10 minutes to ensure proper sealing if canning.

Step 8

Allow the jars to cool completely before storing them in a cool, dark place. Refrigerate after opening and enjoy your Peach Cardamom Jam!
