Ingredients

  • 6 Fresh peaches
  • 2 cups Fresh blueberries
  • 0.25 cup Granulated sugar
  • 2 tablespoons Cornstarch
  • 1 tablespoon Fresh lemon juice
  • 1 teaspoon Vanilla extract
  • 0.75 cup All-purpose flour
  • 0.5 cup Oats
  • 0.5 cup Brown sugar, packed
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 0.5 cup Unsalted butter, cold and cut into cubes
  • 0.5 cup Pecans, chopped
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9-inch baking dish.

Step 2

Slice the peaches into thin wedges, removing the pits. Add them to a large mixing bowl along with the blueberries.

Step 3

In the same bowl, sprinkle the granulated sugar and cornstarch over the fruits. Add the lemon juice and vanilla extract, then gently toss the mixture to coat evenly. Pour the fruit mixture into the prepared baking dish and set aside.

Step 4

In another mixing bowl, combine the all-purpose flour, oats, brown sugar, cinnamon, nutmeg, and salt. Stir to mix all the dry ingredients evenly.

Step 5

Add the cold cubed butter to the dry mixture. Use a pastry cutter or your fingers to work the butter into the mixture until it resembles coarse crumbs.

Step 6

Stir the chopped pecans into the topping mixture.

Step 7

Evenly spread the spiced pecan topping over the fruit mixture in the baking dish.

Step 8

Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the fruit filling is bubbling.

Step 9

Let cool for 10-15 minutes before serving. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream if desired.
