Ingredients

  • 4 whole ripe peaches
  • 1 cup Prosecco
  • 0.5 cup granulated sugar
  • 2 tablespoons lemon juice
  • 0.5 cup water

Directions

Step 1

Begin by peeling the peaches. To make this easier, score a small 'X' at the base of each peach with a knife, then blanch them in boiling water for 30 seconds before transferring them to an ice bath. Once cooled, the skins should slip off easily.

Step 2

Cut the peeled peaches in half, remove the pits, and chop the flesh into small pieces. Set them aside.

Step 3

In a small saucepan, combine the water and granulated sugar. Heat over medium heat, stirring occasionally, until the sugar is fully dissolved, about 3–5 minutes. Remove from heat and allow the syrup to cool completely.

Step 4

In a blender or food processor, combine the chopped peaches, cooled sugar syrup, lemon juice, and Prosecco. Blend until smooth.

Step 5

Pour the peach mixture into a shallow, freezer-safe container. Cover it with a lid or plastic wrap and place it in the freezer.

Step 6

After 1 hour in the freezer, use a fork to scrape and stir the mixture. Repeat this process every 30 minutes for about 3–4 hours, or until the mixture forms fluffy, icy crystals.

Step 7

Once fully frozen and scraped, the Peach and Prosecco Ice is ready to serve. Spoon the mixture into serving glasses or bowls and garnish with a fresh peach slice or a sprig of mint, if desired.
