Peel and pit the peaches, then chop them into small pieces.
In a blender or food processor, puree the peaches until smooth. Set the puree aside.
In a medium saucepan, combine the heavy cream and whole milk. Heat over medium heat until the mixture is hot but not boiling.
In a separate bowl, whisk the egg yolks and granulated sugar together until the mixture is pale and creamy.
Slowly pour the hot cream mixture into the egg mixture, whisking continuously to temper the eggs.
Pour the custard mixture back into the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 5-7 minutes). Do not allow it to boil.
Remove the custard from heat and stir in the vanilla extract, peach puree, and amaretto liqueur (if using). Mix well.
Let the mixture cool to room temperature, then cover and refrigerate for at least 4 hours or overnight to chill completely.
Freeze the chilled mixture in an ice cream maker according to the manufacturer’s instructions.
While the ice cream churns, crush the amaretti cookies into small pieces. (You can do this by placing them in a zip-top bag and crushing them with a rolling pin.)
In the last few minutes of churning, sprinkle the crushed amaretti cookies into the ice cream and allow them to mix evenly.
Transfer the finished ice cream to an airtight container and freeze for at least 2 hours to firm up before serving.
Serve scooped into bowls or cones, and enjoy your Peach Amaretti Ice Cream!
