Ingredients

  • 2 cups Dried split peas
  • 12 ounces Smoked sausage
  • 2 medium Carrots
  • 2 Celery stalks
  • 1 medium Yellow onion
  • 3 Garlic cloves
  • 6 cups Chicken broth
  • 1 Bay leaf
  • 0.5 teaspoons Dried thyme
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 1 tablespoon Olive oil
  • 1 cup Water (optional, for thinning)

Directions

Step 1

Rinse the dried split peas thoroughly in a colander under cold water and set aside.

Step 2

Slice the smoked sausage into 1/2-inch rounds. In a skillet, heat the olive oil over medium heat. Add the sausage slices, cook until browned on both sides, and set aside.

Step 3

Peel and dice the carrots into small cubes. Slice the celery stalks into thin pieces. Peel and finely chop the onion and garlic cloves.

Step 4

In the crock pot, add the rinsed split peas, browned sausage, carrots, celery, onion, and garlic.

Step 5

Pour the chicken broth into the crock pot, followed by the bay leaf, dried thyme, salt, and black pepper. Stir gently to combine.

Step 6

Cover the crock pot with the lid and cook on low heat for 8 hours (or on high heat for 5 hours) until the split peas break down and the soup becomes creamy.

Step 7

Once cooked, stir the soup well to distribute the flavors. If the soup is too thick for your taste, add up to 1 cup of water and stir until the desired consistency is achieved.

Step 8

Remove the bay leaf before serving. Taste and adjust seasoning with additional salt and pepper as needed.

Step 9

Serve hot with crusty bread or a side salad, and enjoy your hearty pea soup!
