Ingredients

  • 1 pound dried split peas
  • 4 links bratwurst
  • 1 large onion
  • 3 medium carrots
  • 2 celery stalks
  • 3 garlic cloves
  • 6 cups chicken broth
  • 2 cups water
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Rinse the dried split peas thoroughly under cold water and set aside to drain.

Step 2

In a skillet over medium heat, add the olive oil. Brown the bratwurst links on all sides, about 4-5 minutes. Remove the bratwurst from the skillet and set aside to cool slightly. Once cooled, slice them into thick rounds.

Peel and dice the onion, carrots, and celery. Mince the garlic cloves.
