Ingredients

  • 2 tablespoons olive oil
  • 6 slices bacon
  • 1 large yellow onion
  • 3 large garlic cloves
  • 4 cups frozen peas
  • 4 cups chicken broth
  • 0.5 cups heavy cream
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Heat a large pot over medium heat and add the olive oil.

Step 2

Cook the bacon slices in the pot until crispy, about 5-7 minutes. Remove the bacon and place it on a plate lined with paper towels. Reserve the bacon fat in the pot.

Step 3

Dice the yellow onion and mince the garlic cloves. Add them to the pot with the bacon fat and sauté over medium heat until the onion becomes translucent, about 4-5 minutes.

Step 4

Add the frozen peas and chicken broth to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.

Step 5

Using an immersion blender (or carefully transferring the mixture to a countertop blender in batches), blend the soup until smooth.

Step 6

Stir in the heavy cream, salt, and black pepper. Let the soup simmer for an additional 5 minutes to combine the flavors.

Step 7

Chop the crispy bacon into small pieces and roughly chop the fresh parsley.

Step 8

Serve the soup hot, garnished with chopped bacon and parsley.
