Ingredients

  • 4 cups vegetable stock

  • 1 bay leaf
  • 2 tablespoons fresh mint leaves, finely chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup heavy cream (optional)
  • 4 slices crusty bread, for serving

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced yellow onion and sauté for 3-4 minutes until translucent.

Step 3

Stir in the minced garlic, diced celery, and diced carrot. Sauté for an additional 5 minutes until the vegetables are softened.

Step 4

Add the frozen peas, vegetable stock, diced potatoes, and bay leaf to the pot.
