Ingredients

  • 2 tablespoons olive oil
  • 1 large, diced yellow onion
  • 3 minced garlic cloves
  • 2 chopped celery stalks
  • 4 cups frozen green peas
  • 4 cups vegetable broth
  • 1 medium, peeled and diced potato
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and sauté for 5 minutes, or until softened and translucent.

Step 3

Stir in the minced garlic and chopped celery, and cook for another 2 minutes until fragrant.

Step 4

Add the frozen green peas, potato, vegetable broth, and the bay leaf to the pot.

Step 5

Bring the mixture to a gentle boil, then reduce the heat to low and simmer for 20-25 minutes, or until the potato is fork-tender.

Use an immersion blender to purée the soup directly in the pot until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth, then return it to the pot.

Serve the soup hot, garnished with additional parsley if desired, and enjoy!
