Ingredients

  • 300 grams Frozen peas
  • 1 piece Garlic clove (minced)
  • 15 grams Unsalted butter
  • 50 milliliters Heavy cream
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 5 leaves Fresh mint leaves (optional)
  • 1000 milliliters Water (for blanching)
  • 10 pieces Ice cubes

Directions

Step 1

Bring 1 liter (1000 milliliters) of water to a boil in a medium-sized pot. Add a pinch of salt to the water.

Step 2

Once the water is boiling, add the 300 grams of frozen peas and blanch them for 2 minutes until they turn bright green and are just tender.

Step 3

While the peas are cooking, prepare an ice bath by filling a bowl with water and adding the 10 ice cubes.

Step 4

Drain the blanched peas and immediately transfer them to the ice bath to stop the cooking process and retain their vibrant green color. Let them cool for 2 minutes, then drain thoroughly.

Step 5

In a medium skillet, melt 15 grams of unsalted butter over low heat. Add 1 minced garlic clove and sauté for 1 minute until fragrant, being careful not to burn the garlic.

Step 6

Transfer the drained peas to a blender or food processor. Add the sautéed garlic, 50 milliliters of heavy cream, 0.5 teaspoons of salt, 0.25 teaspoons of black pepper, and the optional 5 fresh mint leaves.

Blend the mixture on high speed until it reaches a smooth, creamy consistency. If the mixture is too thick, you can add a small splash of water to adjust the texture.
