Ingredients

  • 2 cups fresh peas (shelled or thawed frozen peas)
  • 1 cup fresh green beans
  • 1 cup radishes (thinly sliced)
  • 1 cup cucumber (sliced into half-moons)
  • 0.5 cup red onion (thinly sliced)
  • 4 slices cooked bacon (crumbled)
  • 0.5 cup cheddar cheese (shredded)
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • 1 tablespoon dill (fresh, chopped)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Bring a medium pot of water to a boil. Add the green beans and blanch for 2-3 minutes until they are bright green and slightly tender. Transfer to a bowl of ice water to stop cooking, then drain and set aside.

Step 2

In a large mixing bowl, combine the fresh peas, blanched green beans, sliced radishes, cucumber, and red onion.

Step 3

In a small bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, honey, dill, salt, and black pepper until smooth to make the dressing.

Step 4

Pour the dressing over the salad ingredients and toss gently to coat everything evenly.

Step 5

Sprinkle the crumbled bacon and shredded cheddar cheese on top of the salad.

Step 6

Chill the salad in the refrigerator for at least 15 minutes to allow the flavors to meld together.

Step 7

Serve the Pea Picker Salad cold, garnished with additional dill if desired.
