Directions

Step 1

If using dried beans, soak them overnight in water. Drain and rinse before proceeding. If using dried split peas, no soaking is necessary.

In a large pot, heat the olive oil over medium heat.

Add the diced onion, carrots, and celery. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened and the onion is translucent.
