Ingredients

  • 200 g Frozen peas
  • 200 g Halloumi cheese
  • 75 g All-purpose flour
  • 2 large Eggs
  • 10 g Fresh mint leaves
  • 2 whole Green onions (scallions)
  • 1 small Garlic clove
  • 0.5 tsp Ground black pepper
  • 3 tbsp Olive oil

Directions

Step 1

Bring a small pot of water to a boil. Add the frozen peas and cook for 2 minutes until just tender. Drain and rinse under cold water to stop the cooking process.

Step 2

Grate the halloumi cheese using the coarse side of a box grater and set aside in a large mixing bowl.

Step 3

Finely chop the fresh mint leaves and green onions, and mince the garlic clove. Add these to the mixing bowl with the halloumi.

Step 4

Add the cooked peas to the bowl and lightly mash them with a fork, leaving some whole for texture.

Step 5

Add the flour, eggs, and black pepper to the bowl and mix well until all the ingredients are evenly combined. The mixture should be moist but hold together. If too wet, add a little more flour.

Heat 1 tablespoon of olive oil in a large non-stick frying pan over medium heat.

Using a spoon or your hands, shape the mixture into small patties (about 2 tablespoons each) and gently flatten them.

Place 3–4 fritters in the pan at a time, depending on the size of your pan, ensuring they don’t touch. Cook for 2–3 minutes on each side until golden brown and crispy. Add more oil to the pan as needed between batches.

Transfer the cooked fritters to a plate lined with paper towels to drain excess oil.
