  • 4 cups Chicken or vegetable stock
  • 2 cups Fresh or frozen peas
  • 1 head Romaine lettuce, chopped into large pieces
  • 0.5 cup Heavy cream (optional)
  • 2 tablespoons Fresh mint leaves (optional, for garnishing)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Melt the butter and olive oil in a large pot over medium heat.

Step 2

Add the diced onion and cook, stirring occasionally, until softened and translucent, about 5 minutes.

Step 3

Stir in the minced garlic and cook for another 1 to 2 minutes until fragrant.

Step 4

Pour in the chicken or vegetable stock and bring to a gentle boil.

Add the peas and chopped romaine lettuce to the pot. Reduce the heat to medium-low and simmer for 10 minutes, or until the peas are tender and the lettuce has wilted.
