Ingredients

  • 0.5 cup Unsalted butter, softened
  • 0.5 cup Creamy peanut butter
  • 0.5 cup Granulated sugar
  • 0.5 cup Brown sugar, packed
  • 1 Large egg, room temperature
  • 1 teaspoon Pure vanilla extract
  • 1 cup All-purpose flour
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 1 cup Old-fashioned rolled oats
  • 0.75 cup Semi-sweet chocolate chips

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, cream together the softened unsalted butter, peanut butter, granulated sugar, and brown sugar using a hand mixer or a stand mixer fitted with the paddle attachment until light and fluffy, about 2-3 minutes.

Step 3

Add the egg and vanilla extract to the creamed mixture and beat until fully incorporated.

Step 4

In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed just until combined. Do not overmix.

Step 6

Fold in the rolled oats and semi-sweet chocolate chips using a spatula or wooden spoon until evenly distributed throughout the dough.

Step 7

Using a cookie scoop or a tablespoon, portion the dough into rounded tablespoons and place them on the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake the cookies in the preheated oven for 9-11 minutes, or until the edges are lightly golden and the centers look slightly underbaked. Do not overbake, as the cookies will continue to firm up as they cool.

Step 9

Remove the baking sheets from the oven and let the cookies cool on the sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve the cookies warm or at room temperature. Store any leftovers in an airtight container at room temperature for up to 5 days.
