  • 4 pieces lamb trotters
  • 2 medium onions, finely chopped
  • 2 tablespoons ginger-garlic paste
  • 2 large tomatoes, chopped
  • 1 cup yogurt, whisked
  • 4 tablespoons oil
  • 2 teaspoons red chili powder
  • 1 teaspoon turmeric powder
  • 2 teaspoons coriander powder
  • 1 teaspoon garam masala
  • 2 pieces bay leaves
  • 1 piece cinnamon sticks
  • 4 pieces cardamom pods
  • 4 pieces cloves
  • 2 teaspoons salt
  • 6 cups water
  • 2 tablespoons fresh coriander leaves, chopped
  • 1 tablespoon fresh mint leaves, chopped

Directions

Step 1

Clean the lamb trotters thoroughly under running water to remove any impurities. Set aside.

Step 2

Heat oil in a large heavy-bottomed pot over medium heat. Add bay leaves, cinnamon stick, cardamom pods, and cloves. Stir for a minute until fragrant.

Step 3

Add the chopped onions and sauté until golden brown.

Step 4

Stir in the ginger-garlic paste and cook for another 2 minutes until the raw smell disappears.

Add the chopped tomatoes, red chili powder, turmeric powder, coriander powder, and salt. Cook for about 5 minutes, stirring frequently until the tomatoes soften and the oil separates from the masala.

Once cooked, sprinkle garam masala, fresh coriander leaves, and mint leaves over the curry.
