Preheat your oven to 325°F (165°C).
Rinse the pork shoulder roast and pat it dry with paper towels.
Using a sharp knife, make 8 small slits evenly across the surface of the pork roast. Stuff each slit with a peeled garlic clove.
Finely chop the leaves of 2 rosemary sprigs and 2 thyme sprigs. Combine the chopped herbs, olive oil, salt, black pepper, and smoked paprika in a bowl to create a seasoning paste.
Rub the herb paste generously over the entire surface of the pork roast.
Peel and quarter the onion, carrots, and potatoes. Arrange them in the bottom of a large roasting pan.
Place the remaining rosemary and thyme sprigs over the vegetables for extra flavor.
Set the seasoned pork roast on top of the bed of vegetables in the roasting pan.
Pour the chicken or pork stock into the bottom of the pan to help keep the roast moist and prevent sticking.
Cover the roasting pan tightly with aluminum foil and place it in the preheated oven.
Roast for 2 1/2 hours, basting the pork every 45 minutes with the pan juices.
After 2 1/2 hours, remove the foil and increase the oven temperature to 375°F (190°C). Continue roasting uncovered for another 30 minutes to achieve a golden, crispy exterior.
Remove the roast from the oven and let it rest for 10-15 minutes before carving.
Serve slices of the pork roast alongside the roasted vegetables and pan juices. Enjoy Pawpaw's Sunday tradition!
