Ingredients

  • 4 pounds Pork shoulder roast
  • 8 pieces Garlic cloves
  • 3 sprigs Fresh rosemary
  • 3 sprigs Fresh thyme
  • 2 tablespoons Olive oil
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Smoked paprika
  • 1 large Onion
  • 3 pieces Carrots
  • 4 medium Potatoes
  • 1 cup Chicken or pork stock

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Rinse the pork shoulder roast and pat it dry with paper towels.

Step 3

Using a sharp knife, make 8 small slits evenly across the surface of the pork roast. Stuff each slit with a peeled garlic clove.

Step 4

Finely chop the leaves of 2 rosemary sprigs and 2 thyme sprigs. Combine the chopped herbs, olive oil, salt, black pepper, and smoked paprika in a bowl to create a seasoning paste.

Step 5

Rub the herb paste generously over the entire surface of the pork roast.

Step 6

Peel and quarter the onion, carrots, and potatoes. Arrange them in the bottom of a large roasting pan.
