Ingredients

  • 500 grams Ripe paw paw pulp
  • 100 grams Granulated sugar
  • 240 milliliters Water
  • 2 tablespoons Freshly squeezed lemon juice
  • 1 pinch Salt

Directions

Step 1

Cut the ripe paw paw in half, remove the seeds, and scoop the flesh into a bowl. Measure out 500 grams of paw paw pulp and set it aside.

Step 2

In a small saucepan, combine the granulated sugar and water. Heat over medium heat, stirring occasionally, until the sugar dissolves completely. This will form a simple syrup. Remove from heat and let it cool to room temperature.

Step 3

Once the syrup is cool, blend the paw paw pulp in a blender or food processor until smooth and creamy.

Step 4

Add the simple syrup, freshly squeezed lemon juice, and a pinch of salt to the blender with the paw paw puree. Blend again until all ingredients are fully incorporated.

Step 5

Transfer the mixture to an ice cream maker and churn according to the manufacturer’s instructions, usually about 20–25 minutes, until the mixture reaches a thick and creamy consistency. If you don’t have an ice cream maker, pour the mixture into a shallow, freezer-safe container. Freeze for 3-4 hours, stirring every 30 minutes to break up ice crystals and keep it smooth.

Step 6

Once the sorbet has set, scoop into bowls or cones and serve immediately. Enjoy your tropical homemade Paw Paw Sorbet!
