Ingredients

  • 4 large Egg whites
  • 1 cup Caster sugar (fine sugar)
  • 1 teaspoon Cornflour (cornstarch)
  • 1 teaspoon White vinegar
  • 1 teaspoon Vanilla extract
  • 1 cup Whipping cream
  • 1 cup Fresh fruit (e.g., kiwi, strawberries, passionfruit pulp)

Directions

Step 1

Preheat the oven to 120°C (250°F) and line a baking tray with baking paper. Draw a 20 cm (8-inch) circle on the paper as a guide.

Step 2

In a clean, dry bowl, use an electric mixer to beat the egg whites on medium speed until soft peaks form.

Step 3

Gradually add the caster sugar, one tablespoon at a time, beating thoroughly between each addition. Continue beating until the mixture is glossy and stiff peaks form.

Step 4

Gently fold in the cornflour, white vinegar, and vanilla extract using a spatula. Mix just until combined, being careful not to deflate the mixture.

Step 5

Spoon the meringue mixture onto the prepared baking paper, using the circle as a guide to shape it into a round with slightly raised edges to hold the filling later.

Step 6

Bake in the preheated oven for 90 minutes. Do not open the oven door during this time. After 90 minutes, turn off the oven and allow the pavlova to cool completely inside the oven with the door slightly ajar.

Step 7

Once cooled, carefully transfer the pavlova to a serving plate.

Step 8

Whip the cream until soft peaks form, then spread it over the top of the pavlova.

Step 9

Decorate with fresh fruit, such as sliced kiwi, strawberries, and a drizzle of passionfruit pulp.

Step 10

Serve immediately and enjoy this light, airy dessert!
