Ingredients

  • 1 pound ground beef
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 2 cups frozen mixed vegetables
  • 1 10.5-ounce can cream of mushroom soup
  • 1 cup sour cream
  • 1.5 cups shredded cheddar cheese
  • 1 32-ounce bag frozen tater tots
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat the vegetable oil in a large skillet over medium-high heat.

Step 3

Add the ground beef to the skillet and cook until browned, about 5-7 minutes, breaking it up into small pieces with a wooden spoon.

Step 4

Stir in the diced onion and garlic, and cook for another 2-3 minutes until the onion is soft and fragrant.

Step 5

Season the mixture with salt and black pepper.

Step 6

Remove the skillet from heat and stir in the frozen mixed vegetables.

Step 7

In a large mixing bowl, combine the cream of mushroom soup and sour cream. Mix until smooth.

Step 8

Add the ground beef and vegetable mixture to the soup mixture. Stir until well incorporated.

Step 9

Lightly grease a 9x13-inch baking dish. Spread the beef and vegetable mixture evenly across the bottom of the dish.

Step 10

Sprinkle 1 cup of shredded cheddar cheese over the beef mixture.

Step 11

Arrange the frozen tater tots in a single layer on top of the cheese, covering the entire surface.

Step 12

Bake in the preheated oven for 35-40 minutes, or until the tater tots are golden brown and crispy.

Step 13

Remove the hotdish from the oven and sprinkle the remaining 0.5 cup of cheddar cheese on top. Return to the oven for an additional 5 minutes, or until the cheese is melted.

Step 14

Let the hotdish cool for 5 minutes before serving. Enjoy your hearty and satisfying Paulie's Hotdish!
