Ingredients

  • 3 pounds Pork ribs (baby back or spare)
  • 2 teaspoons Salt
  • 1 teaspoon Freshly ground black pepper
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Cayenne pepper
  • 2 tablespoons Brown sugar
  • 0.25 cup Apple cider vinegar
  • 2 tablespoons Honey
  • 2 tablespoons Tomato paste
  • 1 tablespoon Worcestershire sauce
  • 0.5 teaspoon Crushed red pepper flakes
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

In a small bowl, mix together the salt, black pepper, smoked paprika, garlic powder, onion powder, cayenne pepper, and brown sugar to create a spice rub.

Step 3

Pat the pork ribs dry with paper towels, then generously apply the spice rub on both sides of the ribs, pressing slightly to help it adhere.

Step 4

Wrap the ribs tightly in aluminum foil and place them on a large baking sheet. Bake in the preheated oven for 2.5 hours or until the ribs are tender and the meat starts to pull away from the bone.

Step 5

While the ribs are cooking, prepare the glaze by combining apple cider vinegar, honey, tomato paste, Worcestershire sauce, crushed red pepper flakes, and a tablespoon of water in a small saucepan over medium heat.

Step 6

Bring the glaze mixture to a simmer and allow it to cook for 5-7 minutes, stirring occasionally until slightly thickened. Remove from heat and set aside.

Step 7

Once the ribs are done baking, remove them from the oven and carefully unwrap the foil (watch out for steam).

Step 8

Increase the oven temperature to 425°F (220°C). Baste the ribs generously with the prepared pepper glaze, then return the ribs to the oven, uncovered, for 15 minutes to caramelize the glaze.

Step 9

For extra char and flavor, you can finish the ribs by placing them under the broiler for 3-5 minutes, keeping a close eye to avoid burning.

Step 10

Remove the ribs from the oven, let rest for 5 minutes, then slice between the bones and serve. Enjoy your Texas Pepper Pork Ribs!
