Ingredients

  • 4 tablespoons butter
  • 1 medium yellow onion, finely chopped
  • 1 celery stalk, finely chopped
  • 2 garlic cloves, minced
  • 3 tablespoons flour
  • 2 tablespoons tomato paste
  • 4 cups chicken or seafood stock
  • 1 Bay leaf
  • 1.5 cups heavy cream
  • 1 pound cooked shrimp or lobster, chopped
  • 0.5 teaspoons paprika
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.25 cup sherry or dry white wine (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)

Directions

Step 1

In a large pot, melt the butter over medium heat.

Step 2

Add the chopped onion, celery, and garlic, cooking until the vegetables are soft and fragrant, about 5 minutes.

Step 3

Sprinkle in the flour, stirring constantly, and cook for 2 minutes to form a roux.

Step 4

Stir in the tomato paste, mixing well until evenly combined.

Step 5

Gradually add the chicken or seafood stock, whisking to dissolve the roux, then toss in the bay leaf.

Step 6

Bring the mixture to a simmer and cook for 15 minutes to allow the flavors to marry, stirring occasionally.

Step 7

Remove and discard the bay leaf, then use an immersion blender to puree the soup until smooth. (Alternatively, transfer the mixture in batches to a blender, then return it to the pot.)

Step 8

Stir in the heavy cream, cooked shrimp or lobster, paprika, salt, and black pepper. If using, add the sherry or dry white wine.

Step 9

Simmer for an additional 10 minutes, stirring frequently, until heated through and slightly thickened.

Step 10

Taste and adjust seasonings if necessary.

Step 11

Serve hot, garnished with chopped fresh parsley.
