Directions

Step 1

Sort through the dried navy beans to remove any small stones or debris. Rinse the beans under cold water.

Step 2

In a large pot, combine the beans and 8 cups of water. Bring to a boil over high heat and cook for 2 minutes.

Step 3

Remove the pot from the heat, cover it with a lid, and let the beans soak for 1 hour. Drain and rinse the beans, discarding the soaking water.

Step 4

Return the beans to the pot and add the ham hock, chopped onion, celery, carrot, minced garlic, bay leaf, and 8 cups of fresh water.

Bring the mixture to a boil. Reduce the heat to low, cover the pot with a lid, and simmer gently for 1.5 to 2 hours, or until the beans are tender. Stir occasionally to prevent sticking.
