  • 6 slices bacon
  • 1 medium, finely chopped onion
  • 1 medium, finely chopped green bell pepper

  • 2 tbsp tomato paste
  • 2 cups chicken broth
  • 1 cup uncooked long-grain white rice
  • 1 tsp sugar
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Preheat your oven to 350°F (175°C).

In a large skillet over medium heat, cook the bacon until crisp. Remove the bacon and place it on a paper towel-lined plate. Reserve the bacon drippings in the skillet.

In the same skillet with the bacon drippings, add the finely chopped onion, green bell pepper, celery, and garlic. Cook until the vegetables are soft, about 5 minutes.
