Ingredients

  • 2 cups All-purpose flour
  • 1.5 cups Granulated sugar
  • 0.5 cup Brown sugar
  • 0.5 cup Unsweetened cocoa powder
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1.5 cups Root beer (not diet)
  • 0.5 cup Vegetable oil
  • 2 teaspoons Vanilla extract
  • 2 large Eggs
  • 0.5 cup Unsalted butter
  • 2 cups Confectioners' sugar (powdered sugar)
  • 0.25 cup Root beer (for glaze)
  • 1 scoop per serving Vanilla ice cream (optional, for serving)

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking pan and set it aside.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, cocoa powder, baking soda, and salt until well combined.

Step 3

In another medium-sized bowl, mix the root beer, vegetable oil, and vanilla extract.

Step 4

Gradually add the wet ingredients to the dry ingredients and whisk until smooth and fully blended.

Step 5

Crack in the eggs, one at a time, beating well after each addition.

Step 6

Pour the batter into the prepared baking pan, spreading it evenly.

Step 7

Bake the cake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Step 8

Remove the cake from the oven and let it cool in the pan for about 15 minutes. Then transfer the cake to a wire rack to cool completely.

Step 9

To make the glaze, melt the butter in a small saucepan over medium heat. Stir in the root beer and gradually sift in the confectioners' sugar, whisking until smooth and pourable.

Step 10

Once the cake is completely cool, drizzle the root beer glaze evenly over the top.

Step 11

Slice the cake into squares and serve with a scoop of vanilla ice cream if desired.
