Ingredients

  • 1 piece 9-inch unbaked pie crust
  • 1 cup Pumpkin puree
  • 0.5 cup Granulated sugar
  • 0.5 cup Packed light brown sugar
  • 0.5 cup Heavy cream
  • 3 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Pumpkin pie spice
  • 1 cup Chopped pecans
  • 0.5 cup Corn syrup
  • 2 tablespoons Melted butter
  • 1 to taste Whipped cream (optional, for serving)

Directions

Step 1

Preheat the oven to 350°F (175°C).

Step 2

Place the unbaked pie crust into a 9-inch pie dish. Crimp the edges, if desired, and set aside.

Step 3

In a medium bowl, whisk together pumpkin puree, granulated sugar, brown sugar, heavy cream, 1 egg, vanilla extract, and pumpkin pie spice until smooth and well combined. This will serve as the pumpkin layer of the pie.

Step 4

In another bowl, mix together the chopped pecans, corn syrup, melted butter, and the remaining 2 eggs until fully combined. This will serve as the pecan layer of the pie.

Step 5

Pour the pumpkin filling into the prepared pie crust, spreading it out evenly.

Step 6

Carefully spoon the pecan mixture over the pumpkin layer, ensuring the pecans are evenly distributed.

Step 7

Bake the pie in the preheated oven for about 50-60 minutes, or until the filling is set and the top is golden brown. If the edges of the crust start to brown too quickly, cover them with aluminum foil to prevent burning.

Step 8

Remove the pie from the oven and let it cool completely on a wire rack. This will allow the layers to set properly.

Step 9

Slice and serve with a dollop of whipped cream, if desired.
