Ingredients

  • 1 lb Lump crabmeat
  • 0.3333 cup Mayonnaise
  • 1 tbsp Dijon mustard
  • 1 Egg
  • 1 tbsp Lemon juice
  • 1 tsp Old Bay seasoning
  • 2 tbsp Fresh parsley, chopped
  • 2 tbsp Green onion, finely chopped
  • 1 cup Breadcrumbs (panko or seasoned)
  • 2 tbsp Butter

Directions

Step 1

In a large bowl, combine mayonnaise, Dijon mustard, egg, lemon juice, Old Bay seasoning, chopped parsley, and green onions. Mix until well blended.

Step 2

Gently fold in the lump crabmeat, being careful not to break up the meat too much.

Step 3

Add the breadcrumbs gradually, folding them in until the mixture just holds together. You may not need the full cup of breadcrumbs, so add as needed.

Step 4

Divide the mixture into 8 equal portions and shape them into patties about 3 inches wide.

Step 5

Place the patties on a plate and refrigerate for at least 30 minutes to help them firm up (optional, but helps prevent crumbling).

Heat a large skillet over medium heat, then melt the butter in the skillet.
