Ingredients

  • 14 ounces Sweetened shredded coconut
  • 14 ounces Sweetened condensed milk
  • 1 teaspoon Pure vanilla extract
  • 0.25 teaspoons Salt
  • 2 large Egg whites
  • 0.25 cups Granulated sugar

Directions

Step 1

Preheat your oven to 325°F (163°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, combine the sweetened shredded coconut, sweetened condensed milk, vanilla extract, and salt. Stir until evenly mixed.

Step 3

In a separate clean and dry mixing bowl, use a hand mixer or stand mixer to beat the egg whites on medium speed until soft peaks form.

Step 4

Gradually add the granulated sugar to the egg whites while continuing to beat until the mixture reaches stiff peaks.

Step 5

Gently fold the whipped egg whites into the coconut mixture using a spatula, being careful not to deflate the mixture.

Step 6

Using a tablespoon or cookie scoop, drop rounded mounds of the batter onto the prepared baking sheets, spacing them about 2 inches apart.

Step 7

Bake in the preheated oven for 18–20 minutes, or until the tops of the macaroons are lightly golden and the edges are set.

Step 8

Remove the baking sheets from the oven and let the macaroons cool on the sheets for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 9

Store the macaroons in an airtight container at room temperature for up to 5 days.
