Ingredients

  • 12 pieces Fresh jalapeños
  • 1 cup Cooked shredded chicken
  • 4 ounces Cream cheese, softened
  • 1 cup Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Cilantro, chopped
  • 2 tablespoons Vegetable oil
  • 0.5 cup Sour cream (for serving)
  • 0.5 cup Salsa (for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or aluminum foil.

Step 2

Cut each jalapeño in half lengthwise and remove the seeds and membranes for a milder spice level. Wear gloves to protect your hands from the jalapeño oils.

Step 3

In a mixing bowl, combine the shredded chicken, cream cheese, cheddar cheese, Monterey Jack cheese, chili powder, cumin, garlic powder, salt, black pepper, and chopped cilantro. Mix thoroughly to create a smooth and cohesive filling.

Step 4

Spoon the chicken and cheese mixture into each jalapeño half, pressing gently to fill them evenly, but do not overpack.

Step 5

Brush the tops of the stuffed jalapeños lightly with vegetable oil to help them cook and brown evenly.

Step 6

Arrange the stuffed jalapeños on the prepared baking sheet, spaced slightly apart.

Step 7

Bake in the preheated oven for 12-15 minutes, or until the jalapeños are tender and the cheese filling is bubbly and slightly golden on top.

Step 8

Remove the jalapeños from the oven and let them rest for 5 minutes before serving.

Step 9

Serve the stuffed jalapeños warm with sour cream and salsa on the side for dipping.
