Ingredients

  • 1 package Puff pastry sheets
  • 2 cups Cherry tomatoes
  • 1 cup Shredded mozzarella cheese
  • 0.5 cup Grated Parmesan cheese
  • 2 tablespoons Fresh basil leaves
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 large Egg
  • 1 tablespoon Water

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Thaw the puff pastry sheets according to the package instructions. Once thawed, lightly flour your work surface and roll out the pastry to smooth any creases.

Step 3

Using a 3-inch round cutter, cut 12 circles from the puff pastry sheet and place them on the prepared baking sheet.

Step 4

Score a smaller circle about 1/4 inch inside each pastry round, being careful not to cut all the way through. This will create a border for the tartlets to puff up around the edges.

Step 5

In a small bowl, whisk together the egg and water to create an egg wash. Brush the edges of each pastry circle with the egg wash.

Slice the cherry tomatoes in half and place 2-3 halves inside the scored area of each pastry shell.
