Ingredients

  • 1.5 cups graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 3 apples, peeled, cored, and thinly sliced
  • 1 teaspoon ground cinnamon
  • 2 tablespoons brown sugar
  • 0.5 cup caramel sauce

Directions

Step 1

Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.

Step 2

In a medium bowl, combine the graham cracker crumbs, 2 tablespoons of granulated sugar, and melted butter. Mix thoroughly and press the mixture firmly into the bottom of the prepared pan to form the crust. Set aside.

Step 3

In a large mixing bowl, beat the cream cheese and 1 cup of granulated sugar with an electric mixer until smooth and fluffy. Add the sour cream and vanilla extract, and mix until well combined.

Step 4

Add the eggs one at a time, beating on low speed after each addition until just incorporated. Be careful not to overmix.

Step 5

Pour the cheesecake filling over the prepared crust and smooth the top with a spatula.

Step 6

In a separate bowl, toss the thinly sliced apples with ground cinnamon and brown sugar until evenly coated. Gently arrange the apple slices over the cheesecake filling in an even layer.

Step 7

Bake the cheesecake in the preheated oven for 80-90 minutes or until the center is just set and the edges are lightly golden. Remove from the oven and let it cool to room temperature in the pan.

Step 8

Once cooled, refrigerate the cheesecake for at least 4 hours or overnight for best results.

Step 9

Before serving, drizzle the caramel sauce over the top of the cheesecake and garnish with additional apple slices or cinnamon if desired.

Step 10

Slice, serve, and enjoy this decadent caramel apple cheesecake!
