Ingredients

  • 8 slices bacon
  • 2 tablespoons unsalted butter
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 14.5 ounces diced tomatoes (canned, undrained)
  • 2 cups fresh spinach or romaine lettuce (chopped)
  • 1 teaspoon salt
  • 0.5 teaspoons ground black pepper
  • 0.5 cup shredded cheddar cheese (optional for garnish)

Directions

Step 1

In a large pot or Dutch oven, cook the bacon over medium heat until it is crispy. Remove the bacon and place it on a paper towel-lined plate to drain. Once cooled, crumble the bacon into small pieces and set aside.

Step 2

In the same pot, melt the unsalted butter over medium heat. Add the diced onion and cook for 5-7 minutes, stirring occasionally, until the onion becomes soft and translucent.

Step 3

Add the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Sprinkle the all-purpose flour over the cooked onions and garlic. Stir well to create a roux and cook for 1-2 minutes to remove the raw flour taste.

Step 5

Gradually whisk in the chicken broth, making sure no lumps remain. Bring the mixture to a simmer and cook for about 5 minutes, allowing it to thicken slightly.

Step 6

Stir in the heavy cream, diced tomatoes (including their juice), salt, and ground black pepper. Reduce the heat to low and let the soup simmer for another 10 minutes.

Step 7

Right before serving, stir in the chopped spinach or romaine lettuce until it wilts, about 1-2 minutes.

Step 8

Ladle the soup into bowls and top each serving with crumbled bacon. Optionally, garnish with shredded cheddar cheese for extra flavor.

Step 9

Serve immediately and enjoy the creamy, savory taste of this BLT-inspired soup!
