Ingredients

  • 1 pound Large shrimp (peeled and deveined, tails on)
  • 1 cup All-purpose flour
  • 0.25 cup Cornstarch
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Cayenne pepper (optional, for added spice)
  • 1 cup Beer (preferably pale lager or light beer)
  • 4 cups Vegetable oil (for frying)
  • 1 whole Lemon wedges (for serving)
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

In a large mixing bowl, whisk together the flour, cornstarch, baking powder, salt, garlic powder, and cayenne pepper (if using).

Step 2

Gradually pour the beer into the dry ingredients, whisking until the batter is smooth and slightly thick. Set the batter aside to rest for 10 minutes.

Step 3

Rinse the shrimp under cold water and pat them dry with paper towels.

Step 4

In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 375°F (190°C). Use a thermometer to monitor the temperature for best results.

Step 5

Dip each shrimp into the beer batter, ensuring it is fully coated, and gently shake off any excess batter.

Step 6

Carefully lower the battered shrimp into the hot oil, a few at a time, to avoid overcrowding the pot. Fry the shrimp for 2-3 minutes or until golden brown and crispy, turning them over halfway through cooking if needed.

Step 7

Using a slotted spoon, remove the shrimp from the oil and place them on a plate lined with paper towels to drain any excess oil.

Step 8

Repeat the frying process with the remaining shrimp.

Step 9

Serve the beer-battered shrimp warm with lemon wedges, fresh parsley garnish, and your favorite dipping sauce.
