Ingredients

  • 16 oz Fusilli pasta
  • 1 lb Italian sausage (mild or spicy)
  • 2 tbsp Olive oil
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • 28 oz Crushed tomatoes (canned)
  • 2 tbsp Tomato paste
  • 2 tsp Italian seasoning
  • 0.5 tsp Red pepper flakes (optional)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 cups Mozzarella cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 2 tbsp Fresh basil (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Cook the fusilli pasta until al dente, according to package instructions. Drain and set aside.

Step 3

In a large skillet, heat olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and cooked through, about 5-7 minutes. Transfer to a plate and set aside.

Step 4

In the same skillet, add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another 30 seconds, until fragrant.

Step 5

Stir in the crushed tomatoes, tomato paste, Italian seasoning, red pepper flakes (if using), salt, and black pepper. Let the sauce simmer for 10 minutes, allowing the flavors to meld.

Step 6

Return the cooked sausage to the skillet and stir to combine with the sauce.

Step 7

In a large mixing bowl, combine the cooked pasta with the sausage-tomato sauce, mixing until the pasta is evenly coated.

Step 8

Transfer half of the pasta mixture to a greased 9x13-inch baking dish. Sprinkle 1 cup of shredded mozzarella cheese evenly on top. Add the remaining pasta mixture and sprinkle the remaining 1 cup of mozzarella cheese and 1/2 cup of grated Parmesan cheese on top.

Step 9

Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for another 10-15 minutes, until the cheese is bubbly and golden brown.

Step 10

Remove from the oven and let cool for 5 minutes. Garnish with fresh basil before serving.
